Conversation Heart Candy History

The history of conversation heart candy is fascinating. It was created in 1848 by a candy maker named Oliver R. Chase and it is still made the same way today with natural ingredients like sugar, corn syrup, food coloring; citric acid (to make them sour), and ammonium chloride which gives them their shape through a process called conching where they are mixed for hours at high temperature to break down the molecules of cocoa butter into smaller pieces so that they melt more easily on your tongue.

A lot of words to explain that he basically created the first machine to whip these candy lozenges out faster and in a fun shape.

Yup – they were originally sore throat lozenges – that were designed to help ailing patients. That candy maker was originally a pharmacist!

Food historians say that the conversation heart shape was chosen because it resembles a human mouth with teeth. They are also said to represent kisses and were first called “sweethearts.”

The German word for these candies is Herzensbonbons, which translates as “Heart’s Delight” or “Sugar of my Heart,” and they have been known in Japan since 1907 as Kokin-no-tama or Sweetheart Ball.

In 1912, President Taft became the first American president to receive this type of candy when he received them from his wife who had traveled abroad. The popularity spread quickly around America until World War II where sugar shortages made their production difficult, but after WWII they never stopped being made.

They used to be larger and had longer sayings on them. As with all things over time, the price goes up and the size goes down. The latest development? The candy endearments now speak with common text phrases.

Conversation Heart Shortage

In 2018 Necco declared bankruptcy. The original plant closed and their candy brands were sold off. The rights to Sweethearts were acquired by the Spangler Candy Company. With the purchase of the brand by Spangler, Sweethearts were unavailable for Valentine’s Day 2019 as Spangler set up production of the confections in a new plant.

Sweethearts returned in 2020 with the original flavors from before Necco’s 2010 change to more vivid colors and sour flavors, but due to equipment problems, the familiar sayings were largely either incomplete or missing entirely.

They seem to have all the bugs worked out though and are headed in the correct direction.

Heart Shaped Cupcakes Are a Lie!

Yes – I have heard of the old trick about placing a marble or small ball of tinfoil between the cupcake liner and the muffin tin wall before adding batter and then baking them.

Contrary to the often shared knowledge – you do NOT get a heart shaped cupcake from this. You get a cupcake that looks like it is a scratch-n-dent special.

I blame Tupperware ladies for this rumor – they shared the tip at parties for 30 years.

How do you store Conversation Heart Cupcake?

Here is the thing – with the more futzy designs, I like to make them in advance of an event or get-together. The best way to usually store your finished creations? Room Temperature.

Granted, they aren’t going to be around that long – my family of three could easily take them out in two to three days. They are on sale all the time, always just a buck at your local Dollar Tree store, and super easy to dress up so no one knows you used a boxed mix.

I often keep cupcake bases in my freezer for those times I want to whip up something fun and whimsical – like these Conversation Heart cupcakes or even my Oreo cupcakes.

I must admit – I am not in love with these and will probably try to improve on them later. The red gel icing needs to go and white lettering to replace it.

The conversation heart candy – just. nope.

So, you will need sugar cones for the Gnome Hat Cupcake Toppers. They can be found at your local grocery store- I was lucky to score them at Kroger but they always have a 12-count box at your local Dollar Tree store.

  • Sugar ice cream cones – 1 for each cupcake
  • 6-8 oz melting chocolate
  • 1-2 tablespoons vegetable shortening
  • Red and white frosting
  • Soft yellow, pink, or peach colored jelly beans

Gnome Hat Cupcake Toppers

The first thing you will want to do is to make the Gnome hat cupcake toppers. They need a little time to set up before you fully assemble your adorable little garden guy creations.

Melt chocolate and shortening together to make the chocolate thin enough for dipping the cones.

How to make strawberries last longer

With this being a fleeting season for them, you want to make sure you get the most out of your strawberries.

It is important that they are washed, dried, and stored with care in order to keep them from spoiling too quickly.

The best way to store fresh berries for long-term use is by washing them thoroughly then drying them off completely before placing them into an airtight container lined with paper towels or a cloth towel such as cheesecloth.

This will help absorb moisture which can lead to mold growth when left wet on its own. It also keeps the fruit from sticking together so it won’t go bad more quickly because there’s less surface area exposed where air and bacteria can penetrate through!

Freezing Strawberries

This technique works great if you plan on using them within a few days for an easy dessert or to top off your favorite smoothie bowl. Wash, dry, and hull the berries before placing them on a cookie sheet lined with parchment paper in single layers without touching each other.

Put them into the freezer but make sure you don’t cram too many strawberries onto one tray because this will lower how quickly they freeze and can lead to unpleasantly mushy fruit once thawed out!

In order to use frozen strawberries: as soon as they are taken from the freezer, let them sit at room temperature so that it softens up a bit since being cold can cause any heat-sensitive food like these iced treats to become soggy or icy when placed directly into hot liquids. Then simply slice if desired and add to your favorite smoothie bowl, or top off on a dessert or ice cream sundae.

Generally, the rule of thumb is that if you plan to frost and enjoy them within a couple of days you should be storing your cupcakes at room temperature.

If you do not plan to frost or enjoy them within a couple of days then it’s best to freeze them. Rarely would I pop them in the fridge – the constantly circulating air dries them out too much.

28 Boozy Cupcakes to Spice Up Your Celebration

While I have an incredible collection of boozy margarita cupcakes and more for you, it can be confusing for people. Some call them boozy cupcakes while the terms “cocktail cupcakes” and “drunken cupcakes” seem to be the occasional substitution. Whichever term you use, these are alcohol-infused cupcakes that we are talking about, not boozy cupcakes with pipettes.

When talking about cupcakes with pipettes, it is a plain ol’ alcohol-free cupcake that has all the booze in the pipette. Just before ripping into that cupcake, squeeze the contents of the pipette into the cupcake.

Do boozy cupcakes get you drunk?

They could. There are several factors here to consider. First of all, after baking cupcakes with booze in them for 30 minutes, roughly 30-40% of the booze content has NOT baked out. If you overindulge, you could get tipsy! People like me, who have had gastric bypass surgery, gets tipsy after just one or two sips of wine. 1-2 cupcakes could make us legally drunk! So, for all of those people who want to know “Does alcohol bake out of cupcakes?” the answer is both yes, and no. MOST of it will bake out.

One other thing to consider: what proof is your alcohol? The higher the alcohol content of your choice of mix-in could result in a higher-proof finished product.

Can you replace water with alcohol in cake mix?

Yes. Do not replace ALL of the water with the booze – I suggest only using 1/2 a cup of booze for a boxed cake mix. It the cake mix calls for 1.5 cups of water, use 1 cup of water and half a cup of the booze. Since over half of the alcohol/booze bakes out, you will have a drier cupcake if you substitute much more than that.

How do you add alcohol to cupcake mix?

I’m going to go right to Betty Crocker for the answer on this one – I LOVE the tip about substituting booze for the extract in a recipe! Extracts have a lot of alcohol in them normally so it would be a fair swap out. Just think of Amaretto in chocolate cake or Malibu in peach cupcakes!

When adding liquor to your baking, start with a little and work up to your taste level. Allow enough cooling time to remove the alcohol’s harsh taste. You can substitute alcohol for extracts called for in recipes if you desire. In fact, this could open up a whole new world of flavors to try!

This is challenging as many people are selling baked goods, that they make from home, thanks to the cottage laws. Are you planning on buying the alcohol in bulk? You may need a special license or permit to be able to buy wholesale.

Are you using it as an INGREDIENT? You should be OK. That is if your booze is mixed into the batter and then baked. If you are planning on going the pipette route? You are considered to be selling alcohol and need the liquor license from your state.

The Foodpreneur Institute has this to say:

All you lovely bakers who want to stick a miniature bottle of liqueur or other alcoholic beverage in the top of a cupcake or other food product, beware! Follow your state law. Not sure about the size of the miniatures? They are the 50 ml bottles often used as gifts, samples, or for promotional purposes. But this requirement is for all alcoholic beverages.

Are you planning to sell on Facebook Marketplace? It is a hard “no” on the Facebook Terms of Service. Sweet Fest did the research for us.

Amazing Chocolate Peanut Butter Heart Cupcakes

Valentine’s Day is just around the corner and we are always looking for a fun and frugal way to celebrate. Covid really helps us with that as we have very limited places to go. Our annual fun dinner at the local Japanese Hibachi restaurant is off the table and so is our church function. These Chocolate Peanut Butter Heart Cupcakes cupcakes are a subtle way for us to still celebrate this year – with our own stir fry dinner.

This recipe is made from scratch and should net you 22 cupcakes. You can skip to the part of frosting and decorating if you wish to start with a boxed cake mix. Our post on How to Make Killer Cupcakes should help you make them seem just like the best homemade cupcakes you have tasted.

We use peanut butter filled chocolate Reese’s hearts to top theses beauties, but if peanut butter is an issue for you and your family, try the cute hearts that are puffed riced filled instead. You can get a bag of those krispie hearts at the local dollar store for just a buck!

Chocolate Reese Peanut Butter Heart Cupcakes

You will need:

For the chocolate cupcakes:

  • 1 C flour
  • 1/4 C unsweetened cocoa powder
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/2 Light brown sugar
  • 1/2 C sugar
  • 1/3 C canola oil
  • 1/2 C buttermilk
  • 1 large egg
  • 1 tsp pure vanilla extract
Amazing Chocolate Peanut Butter Heart Cupcakes

For the Chocolate frosting:

  • 1 C unsalted butter, softened to room temperature
  • 1/4 C cocoa powder
  • 3 C powdered sugar
  • 3 tbsp. heavy whipping cream
  • 1 tsp. vanilla extract
  • 1 piping bag fitted with a medium star tip
  • Valentine’s Day Sprinkles
  • 1 bag of Reese’s Peanut Butter Hearts

Directions:

To make the chocolate cupcakes start by preheating the oven to 350°F. Line your cupcake pans with cupcake liners and set aside.

In a large bowl, whisk together the flour, cocoa powder, baking
powder, baking soda, and salt. Use a wire whisk to combine all ingredients. Add in the sugar and brown sugar stir until combined. Add the oil, buttermilk, egg, and vanilla extract. Stir until all is combined.

Pour the batter in the cupcake liners, filling each one 3/4 of the way full. Bake at 350°F for 22 minutes.

Remove the cupcakes from the oven and transfer them to a wire rack to cool while you make the chocolate frosting.

To make chocolate frosting:

In the bowl of a standing mixer, cream together the butter, cocoa
powder, powdered sugar, vanilla, and heavy whipping cream until
smoothly combined and stiff peaks form. Scoop frosting into a piping bag.

Place an unwrapped Reese’s Peanut Butter Heart in the center.

Chocolate Mousse Cupcakes for Your Chocolate Lover

I know this Chocolate Mousse Cupcakes recipe starts with a boxed cake mix – but you could use my Best Chocolate Cupcake Recipe instead. If you use the boxed mix, you should get 22 cupcakes.

Once you have made the actual cupcakes, it doesn’t take long to whip up the chocolate ganache or the chocolate mousse that you will need for your finished masterpieces. Even the vanilla frosting is pretty quick to make. It is all worth it though, these are not only show stoppers, but a party in your mouth if you love chocolate.

Chocolate Mousse Cupcakes

You will need:

  • 1 box of Triple chocolate cake mix
  • 3 large eggs room temp
  • 1/2 C of softened unsalted sweet cream butter
  • 1 C whole milk
  • cupcake liners
  • cupcake pan

Directions

Preheat the oven to 350 degrees. Line cupcake pan with the cupcake liners. In a medium bowl, add the cake mix, butter, milk, stir until combined well. Fill cupcake liners 3/4 of the way full. Bake in the oven for about 21 minutes. Pull out the cupcakes and allow them to cool.

Chocolate Mousse

  • 3 large Egg yolks
  • 6 tbsp powdered sugar
  • 1 ⅔ Heavy Whipping cream
  • 1 C semi-sweet chocolate chips
  • 5 crushed Oreos
  • 3 tbsp whole milk
  • 1 medium piping bag with a star tip
  • 1 C mini chocolate chips for topping

Directions

Using a medium saucepan, mix together the egg yolks, powdered sugar, and ⅓ heavy whipping cream and place over low heat until it starts to thicken and almost is doubled in size while continuing to whisk consistently. Remove from heat and stir in the chocolate chips until melted. Allow it to cool to room temperature.

In a large bowl, beat the 1 ⅓ C heavy whipping cream until stiff peaks form. Whisk ¼ C of the whipped cream into the melted chocolate to lighten it. Pop a piping bag into a drinking glass and fold the edges over the side. Scoop ¼ C of the whipped cream into the piping bag and set aside.

Scoop the rest of the whipped cream into the chocolate mixture and fold gently until combined. Fold in the crushed Oreos.

Ganache Ingredients:

  • 1 C heavy whipping cream
  • 2 C semi sweet chocolate chips
  • 1 large ice cream scooper

Chocolate Ganache directions

Using a small pot, bring the heavy whipping cream to a slow boil. Place the chocolate chips into a heat proof bowl. Pour the hot heavy cream over the chocolate chips. Let sit for 1 minute before whisking until smooth.

Decorating directions

Scoop about ¼ a cup of the mousse onto the top of the cupcake and spread evenly.

Drizzle the gnache onto the mousse.

Vanilla frosting

  • 2 C unsalted butter, softened
  • 4 ½ C powdered sugar
  • 2 tsp pure vanilla extract
  • 3 – 6 Heavy whipping cream
  • 1 large piping bag with star tip
  • 1 C mini chocolate chips

Directions

Using a standing mixer, beat together the butter, powdered sugar, heavy whipping cream, and vanilla until smooth and stiff peaks start to form. Scoop frosting into the piping bag with the little bit of whipped cream.

Decorating directions

Pipe a dollop of frosting on top of the ganache and sprinkle some mini chocolate chips on top of it right away.

Homemade Hostess Cupcakes are not only a little better for you, but kind of fun to make. They are incredibly easy to customize them for your Valentine and so tasty that your eyes literally roll back into your head when they cross your lips.

Homemade Hostess Cupcakes

You will need:

  • 2 C sugar
  • 1 ¾ C flour
  • ¾ C cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1 C buttermilk
  • 1 C fresh brewed coffee
  • ½ C canola oil
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • cupcake linkers
  • Muffin tin

Directions

Preheat oven to 350 degrees and line a cupcake pan with cupcake liners. Using a large bowl, whisk together the dry ingredients. Beat in buttermilk, coffee, oil, eggs, and vanilla until combined – but don’t over beat. You will incorporate too much air into them and have hollow tunnels in your final baked product. Scoop batter into cupcake liners and bake in the oven for 15 minutes. Allow the homemade hostess cupcakes to cool completely. Then cut a little cone out of the center of each chocoalte cupcake.

For the Whipped cream filling you will need:

WHIPPED CREAM FILLING:

  • 2 TBSP cold water
  • 1 ¼ tsp unflavored gelatin
  • 1 ½ C chilled heavy whipping cream
  • ¾ C powdered sugar
  • 2 disposable piping bags, one fitted with a number 2 tip

Directions

Using a small bowl, add the cold water. Sprinkle the gelatin over the cold water and allow to set for 10 minutes.

Using a small pot, add about ½ C water and place over medium to high heat. Place the gelatin bowl over the pot. Once stir until the gelatin is melted.

Using a standing mixer, beat the heavy whipping cream and powdered
sugar until soft peaks form. Beat in the gelatin mixture until stiff peaks have formed. Scoop some of the whipped cream batter into the piping bags. Poke into and pipe cream into the centers of the cupcakes.

For the Chocolate Ganache You Will Need:

  • 1 C semi sweet chocolate chips
  • ½ C heavy whipping cream
  • 1 Disposable piping bag

Directions

Using a small pot, heat up the heavy whipping cream over medium to high heat until slightly simmering. Pour the hot cream over the chocolate chips in a heatproof bowl. Allow to sit for 1 minute before whisking until smooth.

Dip the cupcakes into the chocolate ganache. Allow to harden for a few minutes

Using the filling with the tip, pipe out the words “Love” in cursive
onto the top of the cupcakes as well as the traditional squiggle.

Strawberry Buttercream Recipe Topped Strawberry Cupcakes!

We just finished picking berries at our favorite local farm — both Miss Sarah and Miss Diana filled out baskets! It’s the perfect time for whipping up a batch of my Strawberry Buttercream Recipe, cupcakes, and a few batches of Strawberry Rhubarb Jam!

You can always start with a box of strawberry cake mix to whip up a quick batch of these, but I use a fresh strawberry puree and make them from scratch. You can get my Strawberry Vanilla Cupcakes Recipe in the basic recipes section and it will tell you all about whipping them up with fresh berries and what it means to “macerate” them.

Strawberry Buttercream Recipe

Strawberry Buttercream Frosting is easier to make than you think it might be. It only takes four ingredients and a little bit of time, but it is SO much better than grabbing a can of frosting from the grocery store shelf. The difference in taste is astounding!

You will need:

  • 3 sticks unsalted butter ( at room temp )
  • 4-5 cups confectioners (powdered) sugar
  • 1/4 cup fresh strawberries – washed, hulled, and diced
  • 1 1/2 tsp vanilla extract

Strawberry Buttercream Recipe Directions:

Puree the strawberries with 1 tbsp of sugar in a food processor set to the side.

Cream the butter in the bowl of a stand mixer fitted with a paddle attachment. Add the confectioners sugar, about a cup at a time, and beat just until blended.

Creaming simply means mixing your butter and sugar(s) together until well blended, leaving you with a fluffy light yellow mix. Just do not over mix! Butter and sugars are over-mixed when the butter begins to separate. The butter should feel soft, but not warm or melty.

What is the purpose of the creaming method?

The creaming method is usually the initial and most important step in the recipe and involves beating fat/s and sugar together until the mixture is light in color and his increased in volume. It is important for creating air, needed for leavening and thus helps to produce light and fluffy cakes. In this case? It makes for a light and creamy frosting.

Add the strawberry puree and vanilla, scraping the sides of the bowl as needed so you don’t miss any of the yummy goodness. Beat until the buttercream is light and fluffy, approximately 3-5 minutes (mine was perfect at about a minute).

Frost cupcakes and decorate as your heart desires. I just like a simple star tip and quick squirt on top. If you want to dress the cupcakes up a bit more, pop them into a second, more fancy cupcake liner for presentation.

You will need:

  • 1 box of Funfetti cake mix
  • 3 Eggs
  • 1/2 cup Oil
  • 1 cup Water
  • Muffin pan
  • cupcake liners

Directions:

Preheat the oven to 350 degrees and pop the liners into your muffin pan. Make the cake batter according to the box keeping in mind our tips for

Remove from the oven and let cool.

Frosting ingredients:

  • 1 C unsalted sweet cream butter
  • 2 1/2 C powder sugar
  • 2 tsp vanilla
  • 3-5 TBSP heavy whipping cream
  • green food coloring
  • shredded coconut
  • royal icing bunny feet transfers
  • large star tip
  • large round tip
  • 2 piping bags

Bunny Bum Cupcakes Frosting Directions:

In a standing mixer, combine butter, powder sugar, vanilla, heavy whipping cream, and powder sugar. Mix until stiff peaks form.
Split into two bowls, add green food coloring into one bowl.
Scoop the green frosting fitted with the star tip and set aside
Scoop the regular frosting into the bag fitted with the round tip
Using the round tip, pipe a circle in the middle of the cupcake to make a “Tail”


Dip the cupcake into the shredded coconut
