Cherry Cupcakes From Cake Mix
You can get boxes of cherry cake mix at your local grocery store, or – I like to get the Betty Crocker Delights Cherry Chip Cake Mix by the case off of Amazon. I feel like the Delights Cherry Chip Cake Mix has more cherry flavor, but use whatever you have on hand.
This is a doctored cake mix recipe, so if you are looking for a from-scratch Cherry Cupcake recipe this isn’t it. But, if you are in a pinch and need to get cupcakes made fast – Cherry Cupcakes from a cake mix is the way to go.
How to Make the Cherry Cupcakes Recipe
You will need:
A box of cherry chip cake mix and the items that the box calls for (usually eggs, oil, and water)
- Pink food coloring
- Pink sprinkles
- Maraschino cherries for garnish
Follow the box instructions to make the cupcake batter, adding a touch of pink food coloring to the batter.
Bake as the box instructs and then remove from the oven to cool completely.
How to Make Cream Cheese Frosting
You will need:
- 1 lb cream cheese, softened
- 2 sticks butter, softened
- 1 teaspoon vanilla
- 4 cups powdered sugar
- Pink food coloring
Beat cream cheese, butter, and vanilla until smooth then add in the powdered sugar, 1 cup at a time until it is the desired consistency.
Add a few drops of pink food coloring to the frosting and stir in lightly to create a swirl effect.
Frosting Your Cherry Cupcakes
Place the piping bag into a large glass and fold the sides of the bag over the rim of the glass. Scoop the frosting into the piping bag. Bring the pastry bag edges up and twist them together to start decorating.
Add a 1 mm star tip to your pastry bag.
Frost each cupcake in a swirled pattern, starting from the outside in toward the center.
Shake on sprinkles to the frosting.
Place a maraschino cherry on top.
