The Most Fabulous Red Velvet Mickey Mouse Cupcakes

Today I am combining two of my favorite things – red velvet cupcakes and Mickey Mouse cupcakes for the most awesome Fabulous Red Velvet Mickey Mouse Cupcakes that uses Oreo Cookies for the ears.

Now yes, this recipe is from scratch and set up to make a smaller batch – as we see smaller groups from COVID-19 issues right now. The recipe for the red velvet Mickey Mouse cupcakes makes about 9 cupcakes when all is said and done, but you can easily double or triple it.

I know it uses red food coloring instead of red velvet extract in this recipe – I was out of it and tried to improvise. It actually worked out nicely and the final results were not only tasty, but colorful.

Everything in moderation, right?

It takes me back to my childhood. I was born in the late 60’s and remember watching the “old” Mickey Mouse Club after school in all of it’s black and white glory. Just look at this fun video of the intro:

That song will stay with me to the day I die, LOL! Honestly, I didn’t think the reboot was any comparison to the original, but hey – they tried.

Easy Mickey Mouse Cupcakes Ingredients

Again, you could use my Red Velvet cupcake recipe for this or you can even get a box of red velvet cake mix to make the cupcakes but this is the recipe that is used for the ones you see pictured.

For the Mickey Mouse Cupcakes You Will Need:

  • 1⅛ cups all-purpose flour
  • ¾ tsp baking soda
  • ⅛ tsp salt
  • ½ cup buttermilk, room temperature
  • 1 large egg
  • 1½ tsp white vinegar
  • 1 tsp real vanilla extract
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp red food coloring
  • 6 tbsp unsalted butter, softened to room temperature
  • ¾ cup granulated sugar

For the Mickey Mouse Cupcakes Frosting You Will Need:

  • 1¼ lbs (2½ packages) cream cheese, softened
  • 12 tbsp (1½ sticks) unsalted butter, softened to room temperature
  • 2 tbsp sour cream
  • 2 tsp real vanilla extract
  • ¼ tsp salt
  • 2½ cups powdered sugar
  • Black food coloring

These are the few fun things you will need for making them all look like you see pictured – I found everything on Amazon and linked to it for you.

 Now, let’s make the cupcakes!

Preheat the oven to 350 degrees and then line a cupcake tin with those red cupcake liners.

Whisk together flour, baking soda, and salt in a large mixing bowl.

In a small bowl, combine the egg, buttermilk, vanilla, and vinegar.

In another small bowl, combine the cocoa powder and food coloring to make a paste.

In a stand mixer or large bowl with a hand mixer, beat the softened butter and sugar on medium speed until fluffy.

Reduce the mixing speed to low, then add one-third of the flour mixture, then one-half of the egg and buttermilk mixture; alternating until flour and buttermilk are all combined into a batter.

Now, why do I love Mickey Mouse?

Scrape down the bowl, then add the cocoa paste and beat until just combined.

Fill the individual cupcake tins about ¾ of the way. TIP: use a batter spoon for the perfect amount of batter.

Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

Allow to cool for 10 minutes in the pan, then transfer the cooked cupcakes to a cooling rack to finish cooling. ALWAYS let the cupcakes cool before you frost them.

How to Make the Mickey Mouse Cupcake Frosting

In a stand mixer or with a hand mixer, beat cream cheese, butter, sour cream, vanilla, and salt on medium speed until combined and smooth.

Reduce speed to low and slowly add the powdered sugar. Mix until combined.

Add black food coloring until the frosting is black; about a tablespoon and a half.

To decorate, fill a piping bag with frosting. Use the tip of your choice (round or star tips work best), frost the cupcake by making a circle from the outside to the inside, swirling the icing into a dome.

Place two mini Oreo cookies on the sides for ears and sprinkle the top of the cupcakes with Mickey Mouse Cupcake sprinkles.

Make a Wasp or Ant Man Cupcakes Batch to Have a Movie Night!

I know a lot of people hit this post when looking for Ant Man Cupcakes! This is really a Wasp cupcake in the pictures but you can switch out any of the yellows for red and have your ant man cupcakes.

They would look like my Deadpool Cupcakes but look right at home next to the Wasp Cupcakes. I would grab a bag of plastic ants at the local dollar store and top them off – just wash the ants first.

I have a special spot in my heart for Ant-Man movies as I was one of the bloggers able to be in New York for a preview with Paul Rudd.

Ant Man Actor Makes It

Two simple words: Paul Rudd He. Is. Adorable. I love how excited he was to be a part of the Marvel franchise, and his joke about being like “Cousin Oscar” on The Brady Bunch sitcom.

Paul really is adorable, and fun to watch. Just check out this clip from his third Marvel movie (the second was part of an Avenger’s cameo). That is why I had to make this Wasp Cupcake recipe.

Was Ant Man a box office success?

Grossing over 500 million in USD I would say yes. Even the sequel: Ant Man and the Wasp was considered a success as it came in over 600 million USD. That Marvel Franchise was a hot wave to ride!

Ant Man Cast

Obviously Paul Rudd – and then they brought in Michael Douglass as Hank Pym. Add Evangeline Lily as Hank’s daughter and Scott’s love interest? Dynamite.

Will we see them again soon? When looking at the Marvel 4th phase line up, we see nothing – until the 5th phase where they share Ant-Man and the Wasp: Quantumania.

According to Rotten Tomatoes:

Picking up sometime after Endgame, Scott still needs to put his life back together – granted, he does that constantly. This time, though, he is an acknowledged hero, which should help some.

Although, one imagines his relationship with Cassie (Kathryn Newton, taking over from Emma Fuhrmann) will be fairly different. Also Hope (Evangeline Lilly), Hank (Michael Douglas), and Janet (Michelle Pfeiffer) will need to adjust to life after returning from the Snap.

But their attempt at finding a new normal will be upset by the arrival of Kang the Conqueror (Jonathan Majors), a time traveler with a fantastic connection to the Marvel universe. In April of 2019, Rick and Morty scribe Jeff Loveness emerged as the film’s writer with director Peyton Reed set to return for his third heist with Scott and the gang. In December of 2020, Marvel revealed the title – Ant-Man and the Wasp: Quantumania – and confirmed Newton and Majors’s roles in the film.

OK then. That will be sometime in 2023 — as a rough guesstimate.

Hollywood has had a tough time lately with the COVID-19 situation stalling shooting of films and even all movie theaters being closed. I know there are more Marvel movies on the horizon, but the standard timeline is way off schedule now.

With that being said? You can whip up a batch of these and enjoy Ant Man Cupcakes or Wasp Cupcakes while watching Netflix or Amazon Prime to refresh yourself with the storylines.

That all being said, this recipe should make 18 of the Cupcakes. I apologize now for starting off with a boxed cake mix – I usually like to start them from a scratch recipe and realized I don’t have a white cupcake recipe on under my basic recipes. I will work on fixing that for you!

Yup – I have a fun video for you. Check out all the great Stan Lee off-the-cuff shots! Bloopers used to be at the end of a lot of movies but with the Marvel Universe? We were trained to look for two “Easter Eggs” during the credits instead.

That poor comedienne on the boat tour – I have to watch the movie again to see how much they really cut his lines, LOL!

How to Make Ant Man Cupcakes and Wasp Cupcakes

You will need:

  • 1 box of white cake mix
  • 3 eggs room temp
  • 1/2 C of softened unsalted sweet cream butter
  • 1 C whole milk
  • 1TBSP pure vanilla extract
  • Yellow, and black gel food coloring
  • Clear cupcake liners
  • Muffin pan

Wasp Cupcake Directions

Preheat oven to 350. Line muffin pan with the white cupcake liners. In a medium bowl, add the cake mix, butter, milk, and vanilla extract and stir until combined.

Divide the batter into 3 bowls and add a food color gel into each bowl. Add the yellow to one bowl, and add the black food coloring to the second bowl. Leave the third bowl white. Begin to fill the cupcake liners.

Scoop about 1 tbsp of each colored batter into the cupcake and continue to rotate colors until it is 3/4 of the way full.

Bake in the oven for about 18-20 minutes. Pull out the cupcakes and allow to cool before frosting.

For the frosting you will need:

  • 1 C unsalted sweet cream butter, softened
  • 2 1/2 C powder sugar
  • 1 tsp vanilla
  • 3-5 TBSP heavy whipping cream
  • Yellow, and black gel food coloring
  • 1 disposable piping bag with a star tip

Wasp Cupcake Frosting Directions

Using a stand mixer, combine all ingredients and mix on medium speed. Mix until you see stiff peaks in your frosting. Once the frosting is made, split it into three bowls. Add about 2-4 drops of each color: yellow in one bowl, black in another, leaving the third one white.

Place the piping bag into a large glass and fold the sides of the bag over. Scoop one spoonful of the yellow frosting onto one side of the piping bag. Now scoop one spoonful of the black frosting onto another side of the piping bag. Scoop one spoonful of the white frosting onto the last side of the piping bag and squeeze the icing together. Frost the cooled cupcakes.

I found nonpareils at Michael’s and used the yellow and black mixed together to top the frosting and add that little extra. You might want to whip up a batch of these Ant-Man and Yellow Jacket Drinks to go with them!

The Best Deadpool Cupcakes

The Deadpool movie franchise had me as soon as I heard the name “Ryan Reynolds.” Let’s be honest, he is not only funny, but HAWT!! So, these Deadpool Cupcakes come out of the oven hot – but you let them cool before you add a touch of sweetness to decorate them. I am pretty sure you will be seeing more of Deadpool in movies to come, so pin this recipe for later – you will be all set!

These cupcakes start out with a boxed mix, just because it is a time-saver for the putzy part of multiple colors. This will make 18 cupcakes, if that is important to know for any kind of party size.

Deadpool Cupcakes

You will need:

  • 1 box of vanilla cake mix
  • 3 eggs
  • 1/2 C of softened unsalted sweet cream butter
  • 1 C whole milk
  • 1TBSP pure vanilla bean paste 
  • Red and Black gel food coloring 
  • cupcake liners
  • cupcake pan

Directions for cupcakes:

Preheat oven to 350 and line cupcake pan with the liners. In a medium bowl, combine the cake mix, butter, milk, and vanilla bean paste. Mix until all are combined. Divide the batter into 2 different bowls and add a color into each bowl. One bowl is for Red and the second bowl is for Black. Mix until the shades are what you like.

Scoop about 1 tbsp of each colored batter into the cupcake liners until the liners are 3/4 full.

Bake in the oven for about 21 minutes. Pull out and place on the side to cool.

Frosting Ingredients :

  • 1 C unsalted sweet cream butter, softened
  • 2 1/2 C powder sugar
  • 1 tsp vanilla 
  • 3-5 TBSP heavy whipping cream
  • Red and Black gel food coloring
  • 1 disposable piping bag with a star tip

How to Make Deadpool Cupcakes Sprinkle mix:

1 pouch of Red and Black Nonpareil’s, Red and Black Jumbo Nonpareil’s and sprinkle Jimmies (all bought from Michael’s craft stores)

Combine all sprinkles into a bowl and mix until well combined and set aside.

Deadpool Cupcake Decorating Instructions:

Frosting Directions :

Using a standing mixer, combine all ingredients and mix on medium speed. If your frosting starts looking like powdery rocks, add another tablespoon of heavy whipping cream. Mix until you see creamy stiffed peaks. Once the frosting is made, split it into two different bowls. Add about 2-4 drops of each color in their own bowls and mix until the color is completely mixed.

Place the piping bag into a large glass and fold the sides of the bag over the rim of the glass.

Scoop one spoonful of the Black icing onto one side of piping bag.

Scoop one spoonful of the Red icing onto another side of the piping bag. Bring the pastry bag edges up and twist them together to start decorating! Frost the cooled cupcakes.

That is what we are going to use the icing transfers to make – a car out of the mound of red frosting. It makes these a breeze on the assembly line when it is time to put them all together.

Lightning McQueen Edible Cupcake Toppers

A lot of people rely on fondant here. There is just one problem with that: it has a short window of time before you need to eat them. By making icing transfers, you have an edible cupcake topper that will last a heck of a lot longer and let you have a little grace time before putting the Lightning McQueen Cupcakes together.

Ingredients for the icing transfers

  • 2 egg whites
  • 1 1/2 C powder sugar
  • 1/4 tsp cream of tarter
  • 1/2 tsp vanilla
  • red, black, blue, and yellow food dye

Equipment you need:

  • five piping bags fitted with the number 2 tip
  • Lightning McQueen’s eyes image from google
  • pen or pencil to trace the image
  • piece of white paper
  • Cookie sheet
  • parchment paper
  • 5 bowls

Directions to make the Lightning McQueen transfers

Locate the image of Lightning McQueen’s eyes on google and print it out. Take your piece of paper and place it on top of the image. Using a pen or pencil trace the image onto the white paper about 3-4 times 4 inches apart. Place the paper with the copies onto the cookie sheet.

Fit a sheet of parchment paper onto the cookie sheet and tape the edges so that you have a smooth flat area.

Using the standing mixer, combine the powder sugar, egg whites, cream of tarter and vanilla and mix on medium speed  if the royal icing is still a yellow soup, add in 1/2 C powder sugar.

Continue to mix until you get stiff peaks. Evenly divide the icing into the five bowls:

  • Add a few red drops into the first bowl and mix until combined.
  • Add a few more drops to get the shade of red that you want
  • Add a few blue drops to the second bowl
  • Add a few yellow drops to the third bowl
  • Add a few black drops to the fourth bowl
  • Leave the white icing in the fifth bowl white

Scoop the icing colors into a piping bag. Using the black icing, outline the place lines on Lighting’s eyes. Using the red icing, fill in the top part red.

Using the blue icing, add two blue dots for his eyes.

Using the black icing again, add a dot into the center of the blue dot for his pupils. Using the yellow icing, below Lightning’s eyes on an empty space on the cookie sheet, pipe on 24 small yellow dots for Lightning’s headlights.

Using the black icing, pipe on 48 medium-sized black circles for the tires. Set aside for 1 day to dry.

How to Make Lightning McQueen Cupcake Bases

This recipe is for making the cupcake bases ALMOST from scratch. You COULD use a boxed cake mix if you wanted to. We have talked before about how to dress up a boxed cake mix – and no one would really know.

This recipe will make 12 cupcakes.

Lightning McQueen Cupcakes Ingredients:

  • 1 box of french vanilla cake mix
  • 3 eggs
  • 1/2 C (1 stick) of softened unsalted sweet cream butter
  • 1 C whole milk
  • 1TBSP pure vanilla bean paste
  • cupcake liners
  • cupcake pan

Directions for Lightning McQueen Cupcakes

Preheat oven to 350 and line cupcake pan with the liners. In a medium bowl, combine the cake mix, butter, milk, and vanilla bean paste and mix until combined.

Using a medium ice cream scoop, scoop the batter into the cupcake liners and fill about 3/4 of the way full. Bake in the oven for about 21 minutes. Pull out and place on the side to cool.

Frosting Ingredients:

  • 1 C unsalted sweet cream butter, softened
  • 2 1/2 C powder sugar
  • 1 tsp vanilla
  • 3-5 TBSP heavy whipping cream
  • Red food coloring
  • medium star tip and pastry bag

Lightning McQueen Cupcake Assembly Directions 

Using a standing mixer, combine all ingredients except the food coloring into the bowl and mix on medium speed. If your frosting starts looking like powdery rocks, add another tablespoon of heavy whipping cream. Mix until you see creamy stiffed peaks. Separate the frosting into three bowls.

Add red dye into the bowl and mix until combined. Add a few more drops in to get a bright red. Fit the star tip into the piping bag. Scoop the red frosting into the piping bag. Twist the top of the piping bag and squeeze the frosting down. Take your cooled cupcake and frosting the cupcake from the outer edge.

Gently peel off Lightning’s eyes and place them onto the top center of the cupcake. Add two yellow dots below his eyes, in the corner for the headlights. Add 4 black dots, 2 on each side, for tires.

December 18th, the latest Star Wars chapter comes to life on the screen!

I remember being just a kid and how excited I was to watch the first Star Wars movie — at the old West Towne Movie theater on the West Side of Madison! I have shared all 6 movies with Miss Sarah and we are looking forward to enjoying the latest one over the winter break — but here is a movie inspired treat for you: R2D2 cupcakes, a la Mickey!

You CAN “cheat” with these and NOT make a cupcake from scratch — use a mix! My tip for rocking a mix out is to add one extra egg and, instead of oil, use melted butter.

R2D2 Mickey Cupcake

Chocolate Cupcake Recipe:

Cupcake Ingredients:

1 3/4 C Flour
2 C Sugar
1 C Cocoa
1 1/2 TSP Baking Soda
1 1/2 TSP Baking Powder
1 TSP Salt
2 Eggs
1 C Whole Milk
1/2 C Oil
2 TSP Vanilla
1 C Boiling Water

Cupcake Directions:

-Preheat oven to 350 degrees.
-Line the cupcake tins with paper liners.
-Mix the flour, sugar, cocoa, baking soda, baking powder, and salt in a bowl.
-In a separate bowl add the eggs, whole milk, oil, and vanilla.
-Add the bowl containing the eggs, whole milk, oil, and vanilla to the bowl holding the dry ingredients.
-Mix all together until fully incorporated.
-Beat for 3 minutes on medium.
-Slowly add the boiling water starting with a small amount then pour in the remaining boiling water.
-The batter may be a little runny.
-Scoop batter into cupcake lined cups until 3/4s filled.
-Bake at 350 degrees for 20-25 minutes.
-Remove from oven and allow to cool for 10 minutes.
-Take out of the cupcake pan placing on a wire rack until completely cooled.

Frosting Recipes:

Frosting Ingredients:

1 C soft unsalted butter
4 + C powder sugar
4 TBSP heavy whipping cream
candy rocks

Frosting Directions:

-Cream the butter and powder sugar until it looks light and creamy.
-If it doesn’t cream add several drops of the heavy whipping cream until it creams.
-Test to see if the frosting can form and hold a stiff peak by taking a spoonful of frosting and turning the spoon upside down. If the frosting stays on the spoon it is ready if not then….
– Add more powder sugar 1/2 C at a time…. mix well.
-If ready scoop the frosting into a pastry bag with a large tip.
-Twist the open end of the pastry bag to push the frosting to the tip.
-Start the frosting on the outside edge of the cupcake working to the center of the cupcake.
-Add candy rocks around the top of the frosted cupcake.

Royal Icing Recipe:

Icing Ingredients:

2 egg whites
1 C powder sugar
1/2 tsp cream of tartar
Black, grey, white, blue, and red gel food coloring

Icing Directions:

-Combine all ingredients in a mixing bowl mixing on medium speed for 4 minutes. (except your food coloring)
-If icing is not stiff enough add 1/4 C powder sugar.
– Spoon two TBSP of icing into a bowl, add several drops of red gel food coloring. Mix well.
-Spoon five TBSP of icing into another bowl, adding several drops of blue gel food coloring. Mix well.
-Divide the remaining icing into thirds. The first of the third icing stays white in one bowl. The second of the third remaining icing add several drops of black gel food coloring in another bowl. Stir well.
-The last of the third remaining icing add in several drops of grey gel food coloring in a last bowl. Stir well.

R2D2 Mickey:

-Locate a picture of R2D2 Mickey on Google. Print the picture in color. Tape this picture with several small R2D2 Mickey of it on it to a cookie sheet.
-Tape wax paper (covering the copies of the Mickey) to the cookie sheet . Follow the color and features as printed on the paper.
-Using a small pastry bag fill with the black royal icing and a #2 tip. Start by outlining the Mickey first. Fill in Mickey’s ears with the black icing. Allow this to dry for 30-60 seconds.
-Draw a black line in the middle of Mickey to divide him in half. Fill in the bottom half with the white icing. Allow to dry for 30-60 seconds then add three blue lines across Mickeys lower half of his body.
-Fill in the top half of Mickey with grey icing allowing it to dry for 30-60 seconds.
-Add a blue icing line near to the black dividing line in the center of Mickeys body. Make four small rectangles in the blue icing; two on the left side, one of the right side, and one on the forehead of Mickey. Next add two small blue dots in between the rectangles on the left and the right sides. Add a red dot on top of the second blue dot. Next to the red dot add a grey dot. Add a small black dot on the rectangle on Mickey’s forehead.
-Allow to dry for 5-10 hours.
-Ensure that the image is dry, gently touch one of them with your finger if it allows you to push in on the icing allow it to dry more…. If the image is dry then it will have a hard feeling not allowing you to push in on it.
-Cut the wax paper holding the completed image into squares surrounding the completed R2D2 Mickey.
-Once R2D2 Mickey is dry, carefully peel the wax paper off of the back of the images.
– Place on the frosted cupcake in between the candy rocks.
