Easter Egg Cupcakes: Delicious Easter Treats

Easter Eggs

Why are Eggs so important to Easter?

The egg is a symbol of rebirth and new life. It is also a symbol of hope and resurrection. Easter eggs are often decorated with bright colors to represent the springtime season that Easter falls into.

You can learn a lot more about their relationship with this Ukrainian Easter Egg Study Guide and Craft on our sister site.

Easter Egg Cupcakes

Easter egg cupcakes are a delicious and festive treat to add to your holiday table this coming Easter Sunday – but you won’t want to wait that long to have them.

Just picture a moist lemon cupcake topped with a green grass frosting and topped with a decorated fondant Easter Egg cutout. That is right, no green coconut to be seen anywhere for this perfect Easter treat. Keep that green food coloring for your frosting.

While you can take a yellow cake mix and add lemon extract, you could also just get a lemon cake mix. Lemon extract/oil is available at most gourmet or health food grocery stores, or even online.

A lot of Easter Nest Cupcakes

Are shaped like a nest with either jelly beans or little chocolate eggs on top. We aren’t even using those cute Cadbury mini eggs on the top of the cupcake! Seriously, no candy eggs at all are needed for this perfect Easter cupcake. We used neither but took fondant to make an edible cupcake topper. This is something fun that even the kids could do – have them decorate their own egg toppers!

Easter Egg Cupcake Topper Template

If you don’t have an Easter Egg cookie cutter to use to cut out your fondant, I have a template for you – simply place it over your fondant and get that sharp knife out! It is so much better than trying to freehand it.

Can I use Chocolate Cupcakes?

Yes, you can use any flavor base you wish, I just think the lemon works beautifully with the fondant and is a great color. It just pairs nicely for an Easter dessert. Carrot cupcakes would make for an interesting base too for these fun treats!

  • 1/8 tsp salt
  • 2 large eggs at room temp
  • 3/4 cup white sugar
  • 1/4 cup unsalted butter, cut into 1/2” cubes

How to make Easter Egg Cupcakes

Pre heat oven and then, in a large bowl whisk flour, baking powder, and salt together. Set aside.

Place butter and milk in a microwave-safe dish and zap 2 minutes on high to melt the butter.

In a separate small bowl, with your hand mixer beat eggs for 30 seconds on medium-high speed.

With the beater still going, pour the sugar in over 30 seconds.

Beat eggs for 6 minutes more on a highly faster speed, or until tripled in volume and almost pure white.

When the egg is whipped, scatter 1/3 flour across the surface, then beat on low for 5 seconds. Stop beating, add half the remaining flour, then mix again on low for 5 seconds. Add remaining flour, then mix on Speed 1 for 5 – 10 sec until the flour is just mixed in. Once you can’t see flour, stop straight away.

Pour the hot milk/butter, vanilla, and oil into the now empty flour bowl. Add about 3/4 cups of the Egg Batter into the hot milk. Use a whisk to mix until smooth. It should look kind of foamy.

With the beater on low still, pour the milk mixture into the Egg Batter over 10-15 seconds, then turn the beater off.

Fill your muffin pan with batter until they are 2/3 full. Bake 20-22 minutes until a toothpick comes out clean.

Remove them from the pan and place them on a wire rack to cool before decorating.

How do you store Easter Egg Cupcakes?

Here is the thing – with the more futzy designs, I like to make them in advance of an event or get-together. The best way to usually store your finished creations? Room Temperature.

Granted, they aren’t going to be around that long – my family of three could easily take them out in two to three days. Since you are using fondant, I would keep it to three days or less. Even though you are using frosting instead of buttercream.

Ingredients needed for your Easter Egg Cupcakes:

Easter Egg Cupcakes Ingredients

Easter Egg cupcake decorations

  • Yellow fondant
  • Green frosting or a can of frosting and green food coloring.
  • White frosting in a piping bag with a small cut tip
  • Easter Themed sprinkles

Frosting your Easter Cupcakes

Place the piping bag into a large glass and fold the sides of the bag over the rim of the glass. Scoop the vanilla frosting into the piping bag. Bring the pastry bag edges up and twist them together to start decorating.

Add a Wilton #233 piping tip. – That is my go-to grass tip.

If you don’t have a piping bag, try a plastic bag with the tip snipped off. Frost the cooled and filled cupcakes.

How to make Easter egg cupcakes:

In a large mixing bowl, combine the boxed cake mix, the ingredients it asks for, and the lemon extract, if you needed it. Beat on medium speed until all the ingredients are incorporated and no lumps are seen. Fill your cupcake pan with cupcake papers and then spoon cupcake batter in until they are 2/3 full. Bake cupcakes per box recipe and let them cool completely.
