How to Make The Best Unicorn Cupcakes

Unicorn Cupcakes seem to be hot – so I combined one of my favorite themed holidays with them to create this gem for you today: Patriotic Unicorn Cupcakes!
We get to play off of the whimsy of unicorns, but keep a nod in there to the good ol’ red, white, and blue! The first thing you are going to need is a Patriotic Sprinkle Mix. Simply take:
- 1 package of Wilton Sprinkles pouch mix, Red
- 1 package of Wilton Sprinkles pouch mix, Blue
- 1 package of Wilton Sprinkles pouch mix, Diamond
and open them up into a large bowl, stirring them to combine all of the sprinkles. Just set those babies aside for later use. Or you can get the Old Glory II Sprinkle Mix off of Amazon HERE. It already has a mix of the three different colors!
How to make Patriotic Unicorn Cupcakes
Vanilla Cupcakes is what I usually use, to make the colors of the differently dyed parts of the batter really “pop”, but you can use my yellow cake mix recipe HERE if you want to make these all from scratch. You would need to double that recipe, but a box of cake mix will get you 24 cupcakes.
You will need:
- 1 box of French Vanilla cake mix
- 3 eggs
- 1/2 C (1 stick) of softened unsalted sweet cream butter
- 1 C whole milk
- 1 C Patriotic Jimmy Sprinkles
- cupcake liners
- muffin pan
Directions for cupcakes
Preheat oven to 350 and line your muffin pan with the liners. In a medium bowl, combine the cake mix, butter, milk, and mix until combined – try not to over mix as you don’t want too much air in the batter. That air turns into little tunnels on your finished baked goods, ruining the consistency and look.
Fill the cupcake liners ¾ way full. Bake in the oven for about 20 minutes. Pull out and place on the side to cool while you whip up the frosting.
Vanilla Frosting Ingredients:
- 3 C unsalted sweet cream butter, softened
- 6 C powdered sugar
- 5-7 tbsp. heavy whipping cream
- 2 tsp. vanilla extract
- 1 medium ice cream scoop
- Red and Blue gel food coloring
- 1 package of Wilton Unicorn Icing Decorations (Found at Walmart and Michael’s)
Frosting Directions
Using a standing mixer combine the butter, powdered sugar, heavy whipping cream, vanilla, and mix on medium speed until combined and smooth. Scoop 1 ½ C of frosting into another bowl and set it aside. Using the ice cream scoop, scoop out some frosting and place it onto the cupcakes.
Using a mini angled spatula, lightly spread and smooth evenly into a
thick mound of frosting. Dip the cupcake into the sprinkles to coat the frosting mound.
Using the frosting that was set aside, divide the frosting into two bowls. Mix in red food coloring into one bowl and then mix in blue food coloring into the second bowl. Scoop the red frosting onto 1 side of the piping bag and then scoop the blue frosting onto the other side of the piping bag.
Twist the bag to close the end off and pipe a dollop onto the center of the sprinkled topped unicorn cupcakes. Place the Unicorn Horn and Ears from the icing package into the red
and blue frosting and you are all set!
