The Grinch is a character created by Dr. Seuss. He’s a grumpy, green creature who lives in a cave on Mount Crumpit. He hates Christmas, and he tries to ruin it for everyone else. But in the end, his heart grows three sizes, and he learns the true meaning of the holiday. That’s why we love him!

Between the book, a few different movies, and TV shows. He’s been played by some big names, like Jim Carrey and Benedict Cumberbatch. But no matter who plays him, he’s always lovable – at least, in the end.
Grinch Cupcake Ideas
There are so many different ways that you can make Grinch cupcakes. You can use green frosting, or you can use red and green frosting to make them more festive. You could even add some green food coloring to your batter to make the cupcakes themselves green.
I have seen them frosted plainly with cupcake toppers, and even with strawberries that are turned into little Santa hats to grace the tops of green frosting mounds.
I don’t know about you, but I am crazy busy with the holidays and want EASY things to make if I plan to take stuff out and about. That is why this recipe is so simple, yet we add a hit of flavor to the cupcake base.
How to Make Easy Grinch Cupcakes
These easy grinch cupcakes are perfect for anyone who loves the Grinch. They’re also great for kids to help with because they’re easy to make and decorate.
Personally, I would make these together, as a family, and then have a Grinch movie festival! My favorite version? The one with Jim Carrey.
How did we make these cupcakes green?
We used pistachio pudding and mixed it into our cupcake batter so we actually are making Pistachio Grinch Cupcakes with a wonderful French Vanilla Buttercream Frosting!
This recipe will make 24 delightful Grinch cupcakes
Grinch Cupcake Ingredients:
- 1 15.25-ounce white cake mix
- 1 cup water
- 1/3 cup vegetable oil
- 3 large eggs
- 1-3.35-ounce box of pistachio pudding
- Cupcake liners
- Green and yellow gel food coloring
Frosting Ingredients
- 1 ½ sticks of salted butter, softened
- ½ teaspoon salt
- 4 cups powdered sugar
- 3 tablespoons French vanilla coffee creamer, half and half or whole milk
- 1 large piping bag, 1 large round frosting tip
- Red candy hearts (I got mine on Amazon)
Grinch cupcake tutorial
Preheat the oven to 350°F and place the shelf in the middle of the oven. Line the muffin tin with cupcake liners.
Add cake mix to a large mixing bowl. Using an electric hand or stand mixer, mix in your water, oil, and eggs on medium speed until well incorporated.
Fold in the pistachio pudding mix.
Add batter into the muffin tin until each is about 2/3 full. Bake for 18-20 minutes, or until a toothpick comes out clean. Allow them to cool completely before frosting.
Directions for Making the Frosting:
Using an electric hand or stand mixer, cream the butter, and beat until light and fluffy (about 2 minutes). Mix in the vanilla extract.
Slowly mix in the powdered sugar, 1 cup at a time, while adding a bit of the flavored creamer in between each cup. Continue to mix for 1 minute or until creamy. Add food coloring until the desired color is achieved. For the Grinch green, I just used green gel food coloring I had. Some people have mixed 4-6 drops of yellow and 2-3 drops of green. Up to you!
Frosting Your Grinch Cupcakes
Place the piping bag into a large glass and fold the sides of the bag over the rim of the glass. Scoop the vanilla frosting into the piping bag. Bring the pastry bag edges up and twist them together to start decorating.
Add a 1 mm star tip to your gray bag.
If you don’t have a piping bag, try a plastic bag with the tip snipped off. Frost the cooled and filled cupcakes.
Add a large red candy heart to each one of the cupcakes. Enjoy!
