how to make amazing and easy grinch cupcakes

The Grinch is a character created by Dr. Seuss. He’s such a fun character, and his story is so charming. If you’re looking for a fun holiday treat to make, why not try these easy Grinch cupcakes? They are simple to make, and they taste delicious. We’ll show you how to do it!

– 1 15.25-ounce white cake mix – 1 cup water – 1/3 cup vegetable oil – 3 large eggs – 1-3.35-ounce box of pistachio pudding – Cupcake liners – Green and yellow gel food coloring

CUPCAKE INGREDIENTS:

Add cake mix to a large mixing bowl. Using an electric hand or stand mixer, mix in your water, oil, and eggs on medium speed until well incorporated. Fold in the pistachio pudding mix.  Add batter into the muffin tin until each is about 2/3 full. Bake for 18-20 minutes, or until a toothpick comes out clean. Allow them to cool completely before frosting.

Frosting Ingredients:  – 1 ½ sticks of salted butter, softened – ½ teaspoon salt – 4 cups powdered sugar – 3 tablespoons French vanilla coffee creamer, half and half or whole milk – 1 large piping bag, 1 large round frosting tip – Red candy hearts (I got mine on Amazon)

Directions for Making the Frosting:  Using an electric hand or stand mixer, cream the butter, and beat until light and fluffy (about 2 minutes). Mix in the vanilla extract. 

Slowly mix in the powdered sugar, 1 cup at a time, while adding a bit of the flavored creamer in between each cup. Continue to mix for 1 minute or until creamy. Add food coloring until the desired color is achieved. For the Grinch green, I just used green gel food coloring I had. Some people have mixed 4-6 drops of yellow and 2-3 drops of green. Up to you!

Place the piping bag into a large glass and fold the sides of the bag over the rim of the glass. Scoop the vanilla frosting into the piping bag. Bring the pastry bag edges up and twist them together to start decorating. Add a 1 mm star tip to your gray bag. If you don’t have a piping bag, try a plastic bag with the tip snipped off. Frost the cooled and filled cupcakes. Add a large red candy heart to each one of the cupcakes. Enjoy!
