Looking for a fun and creative way to celebrate lawnmower season? Look no further than lawnmower cupcakes! These delicious treats are sure to put a smile on everyone’s face, and they’re easy enough for even the novice baker to make.

– 2 C sugar – 1 3/4 C flour – 3/4 C cocoa – 1 tsp baking powder – 1 tsp baking soda – 1 tsp salt – 2 eggs, room temp – 1 C whole milk, room temp – 1/2 C canola oil – 2 teaspoons vanilla extract – 1 C boiling water

CUPCAKE INGREDIENTS:

Preheat your oven to 350 degrees. Line the cupcake tins with paper liners. Whisk the sugar, flour, cocoa, baking powder, baking soda, and salt in a medium mixing bowl. Combine the eggs, milk, oil, and vanilla in a smaller bowl.

Add this wet mixture to the dry ingredients, beating on medium until the batter is smooth. Gradually add the boiling water, milk, and oil and blend until the batter is smooth. Using a medium scoop, fill the paper-lined cupcake tins with the prepared batter. Bake at 350 degrees for 20-25 minutes until an inserted toothpick comes out clean. Allow to cool slightly before transferring to wire racks.

Frosting Ingredients:  – 1 cup of unsalted butter – 3 cups of powdered sugar – ½ teaspoon of vanilla extract – Green food coloring gel – Red food coloring gel

In the bowl of a stand mixer or a large bowl, cream together the butter and powdered sugar until light and fluffy. Stir in the vanilla extract, then remove a small amount of the frosting to put into another bowl. With the frosting left in your large bowl, add a few drops of green food coloring gel and mix until you reach your desired shade of green.

Add red food coloring gel and mix until you reach your desired shade of red in the smaller bowl of frosting. Pro tip: If the frosting is still tough and powdery, add 1-2 TBSP heavy whipped cream to make it smoother. Place the piping bag into a large glass and fold the sides of the bag over the rim of the glass. Scoop the red frosting into the piping bag. Bring the pastry bag edges up and twist them together to start decorating.

Add a Wilton 18 sized star tip to your bag. If you don’t have a piping bag, try a plastic sandwich bag with the tip snipped off. Frost the cooled and filled cupcakes. Take the green buttercream frosting and divide it into 2 piping bags: 1 with a large cut tip for the smooth cut grass section of the cupcake and one with a Wilton 233 tip for the uncut grass.

Lawnmower Cupcake Tools:  – Baked and cooled chocolate cupcakes – Piping bag of RED buttercream frosting – Piping bags of GREEN buttercream frosting – 1-2 oz chocolate melts or almond bark in a piping bag with a small cut tip – Hershey nugget candies, 1 per cupcake – Brown mini M&M’s, 1 per cupcake for lawnmower top – Brown regular M&M’s, 4 per cupcake for the wheels

Tutorial:  Place the chocolate melts in a microwave-safe bowl and microwave it for 30 seconds at a time, stirring in between microwaving until smooth.  Cool the chocolate slightly, then pour the melted chocolate into a disposable piping bag. Draw or use a stencil to create a handle shape for the lawnmower on a piece of paper.

Place it on a sheet pan, then place a sheet of wax paper over the image you drew.  Cut a small opening at the tip of the bag of melted chocolate and pipe the handles onto the wax paper, making one for each cupcake. Place the chocolate lawnmower handles in the refrigerator to set up.

Use the green frosting with a large cut tip to pipe a smooth flat path of frosting down the middle of each cupcake to represent mowed grass, as shown.

Place the unwrapped Nugget candy on the end of the green frosting path – the front of the lawnmower will be the side near the edge of the cupcake.

Use the red frosting to cover the nugget candy in star-shaped dollops completely. Place the mini M&M on top of the frosted Nuggets in the center. Add regular M&M wheels on both sides of the frosted Nugget.

Use the green frosting with that Wilton 233 tip, and pipe what will be your unmowed grass on both unfrosted sides of the cupcake.  Next, carefully remove the chocolate lawnmower handles you made from the wax paper and place them just behind the back of the lawnmower as shown.
