Marshmallow “Popcorn” Cupcakes with Browned Butter Buttercream Frosting
You can make the cupcakes from scratch with my yellow cupcake recipe – just use 1 teaspoon LorAnn marshmallow flavor oil instead of the vanilla extract.
For the ease of time and having little people be able to help you make this, we will start with a boxed cake mix today. That should help you end up with 24 cupcakes.
What is Browned Butter?
Browned butter is simply butter that has been cooked over heat until it becomes golden brown and gives off a deliciously nutty aroma. It’s a great way to add flavor to frosting; it only takes a few minutes to make! To brown the butter, simply melt the butter in a small saucepan over medium heat.
Do you use salted or unsalted butter to make Browned Butter Frosting?
The answer is unsalted butter. The salt in salted butter can cause the frosting to be too salty. If you only have salted butter on hand, you can omit the additional salt in the recipe. The only reason we want SALTED butter here is the flavor of the buttered popcorn cupcake – who doesn’t salt their popcorn at the movie theater?
Do movie theaters put real butter on their popcorn?
Most movie theaters don’t use real butter on their popcorn. Instead, they use a butter-flavored oil. This oil is usually a combination of canola oil and soybean oil. It has a high smoke point, which means it can be heated to a high temperature without burning. It also has a yellow color that resembles real butter.

Cupcake Ingredients:
- 1 yellow cake mix
- ¾ cup of water
- 1/3 cup vegetable oil
- 3 large eggs
- 1 teaspoon LorAnn marshmallow flavor oil
- Cupcake liners
Directions for Cupcakes:
Preheat the oven to 350 degrees. Spray the wells of your muffin tin or line them with cupcake liners.
In a large mixing bowl, combine your yellow cake mix with your water, oil, marshmallow flavoring, and eggs on medium-high speed until well incorporated. If you overmix the batter, you will notice little air tunnels in your finished product. That is why I prefer a hand mixer instead of my stand mixer.
Scoop the batter into the muffin tin until each is about 2/3 full.
Bake for 18-20 minutes or until a toothpick comes out clean.
Allow them to cool completely before frosting.
Frosting Ingredients
1 ¼ cup salted butter, softened
3 tablespoons *browned butter
3 tablespoons milk, half and half, or heavy cream
4 cups powdered sugar
1 bag Yummallo Popcorn Marshmallows
1 large piping bag
1 mm Star tip
How to Make Browned Butter Buttercream Frosting
In a large mixing bowl or stand mixer, cream the butter, and beat it until it is light and fluffy. Mix in the browned butter.
Slowly mix in the powdered sugar, 1 cup at a time, while adding a tablespoon of the milk, half and half, or cream between each cup.
Continue to mix for 1 minute or until it is nice and creamy.
Place the piping bag into a large glass and fold the sides of the bag over the rim of the glass. Scoop the vanilla frosting into the piping bag. Bring the pastry bag edges up and twist them together to start decorating.
Add a 1 mm star tip to your bag.
(If you don’t have a piping bag, try a plastic bag with the tip snipped off.)
Frost the cooled and filled cupcakes with a swirl, working from the outside towards the center.
While that frosting is fresh, top your cupcake with a few marshmallows.
*To make browned butter the easy way…add 4 tablespoons of salted butter in a microwave-safe bowl. Heat for 3 minutes on high. Butter will be browned, and the container will be HOT!!
