Banana Split Cupcakes Spell Summer

Why Banana Split Cupcakes? When I was young, the world revolved around the mall. That was the place to be, be seen, and find just about anything you could imagine. The magical place was the drugstore: McCrory’s. They sold clothes, general housewares, had a pharmacy counter, and then a mini restaurant. Similar to Rennebohm’s, McCrory’s had the wooden laminated booths with balloons tied to the coat racks which wee fashioned in between them. The balloons all had a slip of paper in them, from FREE to $1.49. The concept was, eat a banana split and see what price you would pay for it if you had a meal first.

Occasionally, my mom and I would go and have the chicken noodle soup, then split a banana split. We got as low as $0.25 – but never hit a freebie before it closed. She has Alzheimer’s now, and just relived that $0.25 day with glee. I knew it was time to make Banana Split Cupcakes, in her memory.

These may seem a bit futzy – you are making a Neapolitan Cupcake, just like the classic banana split had vanilla, chocolate, and strawberry ice cream nestled into that lengthwise split banana. That is why we use 3 different cake mixes to start with – to create that base for the toppings to be displayed on.

How to Make Banana Split Cupcakes

You will need:

  • 1 Box Triple chocolate cake mix
  • 1 Box Strawberry cake mix
  • 1 Box French Vanilla cake mix
  • Large eggs – however many you need for the 3 cake mixes
  • Canola Oil – however much you need for the 3 cake mixes
  • Water – however much you need for the 3 cake mixes
  • white cupcake liners
  • muffin pan
  • 3 mini ice cream scoops

Preheat oven to 350 degrees and line muffin pan with cupcake liners. Following the directions on the back of the cake boxes, make your cake batters.

Using 1 ice cream scoop for each flavor, scoop strawberry cake batter into the cupcake liners.

Use another scoop to place Chocolate cake batter on top of the strawberry batter, and the third scoop to put the Vanilla cake batter on top of the chocolate batter.

Bake in the oven for 22 minutes or until a toothpick comes out clean and then allow to cool on the counter completely.

For the Banana Split Cupcakes Frosting

You will need:

  • 2 C Unsalted Sweet Cream Butter, softened
  • 4 C powdered sugar
  • 3 tsp pure vanilla extract
  • 5-7 tbsp heavy whipping cream 
  • 1 medium ice cream scoop
  • 1 large piping bag fitted with a star tip
  • 2 C Confetti sprinkles

Using a standing mixer, beat all frosting ingredients together until combined and smooth, with stiff peaks forming. Scoop 1 C of frosting into the piping bag and set aside.

Mix the sprinkles in the rest of the frosting until combined and set the bowl aside.

What you need for the Chocolate ganache

  • 1 1/2 C semi sweet chocolate chips 
  • 3/4 C heavy whipping cream
  • 1 Squeeze bottle

Using a small pot, heat up the heavy whipping cream until steaming. While heavy whipping cream is heating up, place chocolate chips into a heat-proof bowl. Once the heavy whipping cream is heated, pour over the chocolate chips. Allow the ganache to sit for 1 minute before whisking until smooth. Pour ganache into the squeeze bottle.

Decorating ingredients you will need:

  • 1 Container of confetti sprinkles – I like the two-pound bulk ones I get HERE.
  • 1 can of peanut topping 
  • Maraschino Cherries

How to decorate the banana split cupcakes

Using the ice cream scoop, scoop frosting with the sprinkles mixed in onto the top of the cupcake like we did in the patriotic cupcakes:

Use the squeeze bottle and drizzle chocolate ganache onto the top of the frosting to look like hot fudge. Pipe a dollop of frosting out of the piping bag onto the of the ganache to look like whipped cream. Sprinkle a little bit of sprinkles and chopped peanuts onto the frosting/ faux whipped cream. Top with a Maraschino cherry and your are ready to rip into it like a monkey on a cupcake…I hope they remind you os fun summer evenings of your own youth!

Unicorn Cupcakes seem to be hot – so I combined one of my favorite themed holidays with them to create this gem for you today: Patriotic Unicorn Cupcakes!

We get to play off of the whimsy of unicorns, but keep a nod in there to the good ol’ red, white, and blue! The first thing you are going to need is a Patriotic Sprinkle Mix. Simply take:

  • 1 package of Wilton Sprinkles pouch mix, Red
  • 1 package of Wilton Sprinkles pouch mix, Blue
  • 1 package of Wilton Sprinkles pouch mix, Diamond

and open them up into a large bowl, stirring them to combine all of the sprinkles. Just set those babies aside for later use. Or you can get the Old Glory II Sprinkle Mix off of Amazon HERE. It already has a mix of the three different colors!

How to make Patriotic Unicorn Cupcakes

Vanilla Cupcakes is what I usually use, to make the colors of the differently dyed parts of the batter really “pop”, but you can use my yellow cake mix recipe HERE if you want to make these all from scratch. You would need to double that recipe, but a box of cake mix will get you 24 cupcakes.

You will need:

  • 1 box of French Vanilla cake mix
  • 3 eggs
  • 1/2 C (1 stick) of softened unsalted sweet cream butter
  • 1 C whole milk
  • 1 C Patriotic Jimmy Sprinkles
  • cupcake liners
  • muffin pan

Directions for cupcakes

Preheat oven to 350 and line your muffin pan with the liners. In a medium bowl, combine the cake mix, butter, milk, and mix until combined – try not to over mix as you don’t want too much air in the batter. That air turns into little tunnels on your finished baked goods, ruining the consistency and look.

Fill the cupcake liners ¾ way full. Bake in the oven for about 20 minutes. Pull out and place on the side to cool while you whip up the frosting.

Vanilla Frosting Ingredients:

  • 3 C unsalted sweet cream butter, softened
  • 6 C powdered sugar
  • 5-7 tbsp. heavy whipping cream
  • 2 tsp. vanilla extract
  • 1 medium ice cream scoop
  • Red and Blue gel food coloring
  • 1 package of Wilton Unicorn Icing Decorations (Found at Walmart and Michael’s)

Frosting Directions

Using a standing mixer combine the butter, powdered sugar, heavy whipping cream, vanilla, and mix on medium speed until combined and smooth. Scoop 1 ½ C of frosting into another bowl and set it aside. Using the ice cream scoop, scoop out some frosting and place it onto the cupcakes.

Using a mini angled spatula, lightly spread and smooth evenly into a
thick mound of frosting. Dip the cupcake into the sprinkles to coat the frosting mound.

Using the frosting that was set aside, divide the frosting into two bowls. Mix in red food coloring into one bowl and then mix in blue food coloring into the second bowl. Scoop the red frosting onto 1 side of the piping bag and then scoop the blue frosting onto the other side of the piping bag. Twist the bag to close the end off and pipe a dollop onto the center of the sprinkled topped unicorn cupcakes. Place the Unicorn Horn and Ears from the icing package into the red
and blue frosting and you are all set!

Homemade Hostess Cupcakes for Valentine’s Day

Homemade Hostess Cupcakes are not only a little better for you, but kind of fun to make. They are incredibly easy to customize them for your Valentine and so tasty that your eyes literally roll back into your head when they cross your lips.

The subtle hint of coffee balances wonderfully with the buttermilk and makes for a truly decadent and rich texture to treat yourself.

Homemade Hostess Cupcakes

You will need:

  • 2 C sugar
  • 1 ¾ C flour
  • ¾ C cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1 C buttermilk
  • 1 C fresh brewed coffee
  • ½ C canola oil
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • cupcake linkers
  • Muffin tin


Preheat oven to 350 degrees and line a cupcake pan with cupcake liners. Using a large bowl, whisk together the dry ingredients. Beat in buttermilk, coffee, oil, eggs, and vanilla until combined – but don’t over beat. You will incorporate too much air into them and have hollow tunnels in your final baked product. Scoop batter into cupcake liners and bake in the oven for 15 minutes. Allow the homemade hostess cupcakes to cool completely. Then cut a little cone out of the center of each chocoalte cupcake.

For the Whipped cream filling you will need:


  • 2 TBSP cold water
  • 1 ¼ tsp unflavored gelatin
  • 1 ½ C chilled heavy whipping cream
  • ¾ C powdered sugar
  • 2 disposable piping bags, one fitted with a number 2 tip


Using a small bowl, add the cold water. Sprinkle the gelatin over the cold water and allow to set for 10 minutes.

Using a small pot, add about ½ C water and place over medium to high heat. Place the gelatin bowl over the pot. Once stir until the gelatin is melted.

Using a standing mixer, beat the heavy whipping cream and powdered
sugar until soft peaks form. Beat in the gelatin mixture until stiff peaks have formed. Scoop some of the whipped cream batter into the piping bags. Poke into and pipe cream into the centers of the cupcakes.

For the Chocolate Ganache You Will Need:

  • 1 C semi sweet chocolate chips
  • ½ C heavy whipping cream
  • 1 Disposable piping bag


Using a small pot, heat up the heavy whipping cream over medium to high heat until slightly simmering. Pour the hot cream over the chocolate chips in a heatproof bowl. Allow to sit for 1 minute before whisking until smooth.

Dip the cupcakes into the chocolate ganache. Allow to harden for a few minutes

Using the filling with the tip, pipe out the words “Love” in cursive
onto the top of the cupcakes as well as the traditional squiggle.

Make a Wasp or Ant Man Cupcakes Batch to Have a Movie Night!

I know a lot of people hit this post when looking for Ant Man Cupcakes! This is really a Wasp cupcake in the pictures but you can switch out any of the yellows for red and have your ant man cupcakes.

They would look like my Deadpool Cupcakes but look right at home next to the Wasp Cupcakes. I would grab a bag of plastic ants at the local dollar store and top them off – just wash the ants first.

I have a special spot in my heart for Ant-Man movies as I was one of the bloggers able to be in New York for a preview with Paul Rudd.

Ant Man Actor Makes It

Two simple words: Paul Rudd He. Is. Adorable. I love how excited he was to be a part of the Marvel franchise, and his joke about being like “Cousin Oscar” on The Brady Bunch sitcom.

Paul really is adorable, and fun to watch. Just check out this clip from his third Marvel movie (the second was part of an Avenger’s cameo). That is why I had to make this Wasp Cupcake recipe.

Was Ant Man a box office success?

Grossing over 500 million in USD I would say yes. Even the sequel: Ant Man and the Wasp was considered a success as it came in over 600 million USD. That Marvel Franchise was a hot wave to ride!

Ant Man Cast

Obviously Paul Rudd – and then they brought in Michael Douglass as Hank Pym. Add Evangeline Lily as Hank’s daughter and Scott’s love interest? Dynamite.

Will we see them again soon? When looking at the Marvel 4th phase line up, we see nothing – until the 5th phase where they share Ant-Man and the Wasp: Quantumania.

According to Rotten Tomatoes:

Picking up sometime after Endgame, Scott still needs to put his life back together – granted, he does that constantly. This time, though, he is an acknowledged hero, which should help some.

Although, one imagines his relationship with Cassie (Kathryn Newton, taking over from Emma Fuhrmann) will be fairly different. Also Hope (Evangeline Lilly), Hank (Michael Douglas), and Janet (Michelle Pfeiffer) will need to adjust to life after returning from the Snap.

But their attempt at finding a new normal will be upset by the arrival of Kang the Conqueror (Jonathan Majors), a time traveler with a fantastic connection to the Marvel universe. In April of 2019, Rick and Morty scribe Jeff Loveness emerged as the film’s writer with director Peyton Reed set to return for his third heist with Scott and the gang. In December of 2020, Marvel revealed the title – Ant-Man and the Wasp: Quantumania – and confirmed Newton and Majors’s roles in the film.

OK then. That will be sometime in 2023 — as a rough guesstimate.

Hollywood has had a tough time lately with the COVID-19 situation stalling shooting of films and even all movie theaters being closed. I know there are more Marvel movies on the horizon, but the standard timeline is way off schedule now.

With that being said? You can whip up a batch of these and enjoy Ant Man Cupcakes or Wasp Cupcakes while watching Netflix or Amazon Prime to refresh yourself with the storylines.

That all being said, this recipe should make 18 of the Cupcakes. I apologize now for starting off with a boxed cake mix – I usually like to start them from a scratch recipe and realized I don’t have a white cupcake recipe on under my basic recipes. I will work on fixing that for you!

Ant Man Bloopers

Yup – I have a fun video for you. Check out all the great Stan Lee off-the-cuff shots! Bloopers used to be at the end of a lot of movies but with the Marvel Universe? We were trained to look for two “Easter Eggs” during the credits instead.

That poor comedienne on the boat tour – I have to watch the movie again to see how much they really cut his lines, LOL!

How to Make Ant Man Cupcakes and Wasp Cupcakes

You will need:

  • 1 box of white cake mix
  • 3 eggs room temp
  • 1/2 C of softened unsalted sweet cream butter
  • 1 C whole milk
  • 1TBSP pure vanilla extract
  • Yellow, and black gel food coloring
  • Clear cupcake liners
  • Muffin pan

Wasp Cupcake Directions

Preheat oven to 350. Line muffin pan with the white cupcake liners. In a medium bowl, add the cake mix, butter, milk, and vanilla extract and stir until combined.

Divide the batter into 3 bowls and add a food color gel into each bowl. Add the yellow to one bowl, and add the black food coloring to the second bowl. Leave the third bowl white. Begin to fill the cupcake liners.

Scoop about 1 tbsp of each colored batter into the cupcake and continue to rotate colors until it is 3/4 of the way full.

Bake in the oven for about 18-20 minutes. Pull out the cupcakes and allow to cool before frosting.

For the frosting you will need:

  • 1 C unsalted sweet cream butter, softened
  • 2 1/2 C powder sugar
  • 1 tsp vanilla
  • 3-5 TBSP heavy whipping cream
  • Yellow, and black gel food coloring
  • 1 disposable piping bag with a star tip

Wasp Cupcake Frosting Directions

Using a stand mixer, combine all ingredients and mix on medium speed. Mix until you see stiff peaks in your frosting. Once the frosting is made, split it into three bowls. Add about 2-4 drops of each color: yellow in one bowl, black in another, leaving the third one white.

Place the piping bag into a large glass and fold the sides of the bag over. Scoop one spoonful of the yellow frosting onto one side of the piping bag. Now scoop one spoonful of the black frosting onto another side of the piping bag. Scoop one spoonful of the white frosting onto the last side of the piping bag and squeeze the icing together. Frost the cooled cupcakes.

I found nonpareils at Michael’s and used the yellow and black mixed together to top the frosting and add that little extra. You might want to whip up a batch of these Ant-Man and Yellow Jacket Drinks to go with them!

Peach Cobbler Cupcakes Scream Summertime

My family on my mom’s side comes from the South. Not the Deep South, but south enough that all iced tea is sweet, June-bugs and fireflies are celebrated, and peaches are so sweet, you practically pull chin drippin’ beauties off your own plants in the back yard. That is the inspiration for these peach cobbler cupcakes, the simpler times of my youth spent on grandma’s back porch.

Peach Cobbler Cupcakes Scream Summertime

Generally, peaches are harvested from late June through August. Color is a great indicator of maturity, as peaches are ripe when the ground color of the fruit changes from green to completely yellow. How can you tell when peaches are ready to be picked? Ripe peaches will lose their green firmness and they will “give” slightly when gently squeezed. You can test the firmness of a ripe peach while it is still on the tree. If the peaches are still hard when you squeeze them, they need more time to ripen on the tree. Check back in a few days. That being said, this recipe doesn’t use fresh peaches, but a can or quart of peach pie filling. I can my own, but Wilderness is a great brand if you have to buy it. I am warning you, you will want to stock up on it though! After you try these peach cobbler cupcakes, you will be an addict.

The other thing you need to keep in mind? This recipe uses a box mix. If you want to make the cupcake base from scratch, use our recipe HERE and skip the first four ingredients listed.

Peach Cobbler Cupcakes

You will need:

  • 1 box of Butter Yellow Cake mix
  • 1 C water
  • 1/3 C unsalted butter, softened
  • 3 large eggs
  • 1 Cupcake pan
  • Cupcake liners


Preheat oven to 350 degrees and line cupcake pan with the liners. Using a hand or standing mixer, beat together all ingredients until thoroughly combined and mixed together. Scoop ¾ cup batter into the liners. Bake in the oven for 19 minutes or until a light golden brown. Allow to cool completely.

Vanilla Frosting

  • 2 C unsalted butter, softened
  • 4 ½ C powdered sugar
  • 2 tsp pure vanilla extract
  • 3 – 6 Heavy whipping cream
  • 1 large piping bag with star tip
  • 1 – 21oz peach pie mix – or quart homemade pie filling


Using a standing mixer, beat together the butter, powdered sugar, heavy whipping cream, and vanilla until smooth and stiff with peaks. Scoop frosting into the piping bag.

Crumble Topping

  • ½ C light brown sugar
  • ¼ C sugar
  • 1 tsp ground cinnamon
  • ¼ tsp kosher salt
  • ½ C unsalted butter, melted
  • 1 ¼ C flour


Combine all ingredients into a medium bowl. Using your fingers, mix ingredients together until combined and crumble like.

Building the cupcake directions

Pipe a ring of frosting onto the top of the cupcake. Repeat step again to have a “wall” of frosting.

Remove some peaches from the can and cut into smaller bites. Scoop some of the peaches into the center of the frosting.

Sprinkle some crumble on top and they your works of edible art are ready to share with friends and family.

Abrahamic religions often depict angels as benevolent celestial beings who act as intermediaries between God (or Heaven) and humanity. Other roles of angels include protecting and guiding human beings, and carrying out tasks on behalf of God. We tend to cherish that perceived relationship and have pulled it into our popular culture for everything from home decor to holiday cards. We refer to our children as little angels, and keep them around as gentle reminders that we are not alone. Personally, I have an eight foot long holiday garland that has dozens of angel ornaments wired into it.

Angel Wing Cupcakes

I am not really talking about making cupcakes here, but how to decorate them. You can pick any of my basic cupcake recipes to make the base for these creations; yellow cupcakes, chocolate cupcakes, red velvet cupcakes, even Keto cupcakes! You can save a few steps with this recipe also – you can buy the pretzel twists already covered with white chocoalte. Ou can buy the Oreos alreayd covered with white chocolate, but you will still need a little to “glue” the Live Saver on.

You will need:

  • 12 cupcakes
  • 1 to 2 cups white frosting
  • Sprinkling sugar
  • 24 pretzel twists (2 for each cupcake)
  • 12 Oreo cookies (1 for each cupcake)
  • 12 pineapple-flavored Lifesaver candies (1 for each cupcake)
  • White candy melts or vanilla flavored almond bark
  • Chocolate candy melts or chocolate flavored almond bark

You will also need:


Line a baking sheet with waxed paper.

Melt white candy according to package directions making sure not to overheat. If the candy gets too hot, it will seize. If desired, add 1 teaspoon vegetable shortening or coconut oil to make the melted candy pour-able.

Dip the pretzel twists in melted candy, allowing excess to drip back into the bowl. Place the pretzels on waxed paper until dry.

Dip Oreo cookies in melted candy, allowing excess to drip back into the bowl. Place the cookie on waxed paper and immediately add the Lifesaver candy as a halo. Allow to dry completely.

Melt chocolate candy according to package directions making sure not to overheat. If the candy gets too hot, it will seize. If desired, add 1 teaspoon vegetable shortening or coconut oil to make the melted candy pour-able.

Using a toothpick, draw two half circles on the uncoated portion of each cookies to be the eyes and a larger dot as the mouth. Allow to dry completely.

Pipe frosting on each cupcake using an open star tip.

Sprinkle with sparking sugar.

Place one angel head on the top and two pretzels to the opposite sides of each cupcake.
